Lemon 3 Ways (Citron Trois Fois)

Description:

  • Citron Tarte
  • Lemon Mousse with white chocolate Lemon Myrtle Bark
  • Raspberry and Chocolate Biscuit Base and Soil
  • Orange Tuille filled with Lemon Myrtle Ice-cream
  • Chocolate Ganache

In Hospitality this week the Year 10 Certificate 1 class worked tirelessly to produce a delicious dessert fit for a 5-star restaurant. In total 10 covers were identically plated and beautifully presented. We used seasonal citrus fruits and indigenous ingredients to cook a recipe using nine elements.

We called it “Citrus Three Ways” and included steps:

1-2 an orange tuile basket filled with lemon myrtle ice-cream

3-4 a light lemon mousse resting on a raspberry chocolate biscuit base

5-6 a chocolate ganache triangle with chocolate soil

7-8 a citron butter filled orange short crust tartlet

9 a white chocolate and lemon myrtle* bark

*Lemon myrtle is a beautiful Australian shrub; it grows up to 3 metres high. The clusters of cream feathery flowers create a spectacular and fragrant display. The Lemon Myrtle leaf is a most versatile and refreshing herb. The leaves can be cool dried (to prevent loss of essential oils) and then ground and stored in a cool, dry manner for later use. It is a relatively new addition to grocery shelves, though is without doubt the most popular of Australia’s native herbs, with its fresh fragrance of creamy lemon and lime. It compliments so many culinary delights, from fish and chicken to ice cream or sorbet.

These nine elements produced a variety of zingy flavours and classic textures. Hopefully they made it back to show mum and dad. Or perhaps they were shared on the Friday afternoon bus trip home?

Well done to Brigid King, Ethan Van Dyken, Tyler McKinnon, Mathue Simmonds and Gus Hutton for creating this fantastic dessert.

Skill Hire WA is pleased to announce the VETiS Scholarship program for students going into Year 11 in 2018. This program is fully funded by the Construction Training Fund (CTF).

For this scholarship, Skill Hire is looking for highly motivated candidates with an interest in pursuing a fulfilling career in the construction industry. This scholarship is aimed at an elite group of students who will receive high class training and exposure to real work sites, complete extensive practical demonstrations and theoretical work in our purpose built training facility, in conjunction with CTF.

Skill Hire will work closely with individuals to ensure scholars are kept in touch with the current techniques and industry trends to build their knowledge and develop a future career.

This scholarship program will run over two years, one day a week on Fridays, commencing 9 February 2018.
